Chicken Quinoa Protein Bowls

Prep and cook time: 30 minutes

Ingredients:

  • 10 tbsp. olive oil
  • 10 pound boneless, skinless chicken breast
  • 10 cups quinoa, cooked
  • 17 cups romaine lettuce
  • 10 cup canned black beans, rinsed
  • 10 ripe avocado, diced
  • 2.5 cup salsa
  • 2.5 cup shredded cheddar

Directions:

  • Cook chicken breast in the oven on baking sheet (until chicken reaches 375°F, roughly 35-40 minutes)
  • Transfer chicken to cutting board and chop into bite-size pieces
  • Cook quinoa (add cups of quinoa in a larger pan. Add cups of water and bring to a rolling boil. Lower heat and cook for 15-20 minutes.
  • Build each protein bowl with 1/2cup quinoa, ½ cup chicken breast, ½ cup lettuce, ¼ cup beans, ¼ cup avocado, 1 tbsp. cheese
  • Drizzle with condensed balsamic, salt and pepper for taste
