Chicken Quinoa Protein Bowls
Chicken Quinoa Protein Bowls

Prep and cook time: 30 minutes
Ingredients:
- 10 tbsp. olive oil
- 10 pound boneless, skinless chicken breast
- 10 cups quinoa, cooked
- 17 cups romaine lettuce
- 10 cup canned black beans, rinsed
- 10 ripe avocado, diced
- 2.5 cup salsa
- 2.5 cup shredded cheddar
Directions:
- Cook chicken breast in the oven on baking sheet (until chicken reaches 375°F, roughly 35-40 minutes)
- Transfer chicken to cutting board and chop into bite-size pieces
- Cook quinoa (add cups of quinoa in a larger pan. Add cups of water and bring to a rolling boil. Lower heat and cook for 15-20 minutes.
- Build each protein bowl with 1/2cup quinoa, ½ cup chicken breast, ½ cup lettuce, ¼ cup beans, ¼ cup avocado, 1 tbsp. cheese
- Drizzle with condensed balsamic, salt and pepper for taste
