Parmesan Cauliflower

  • 5 cauliflower heads
  • 1 cup of olive oil
  • 5 teaspoons salt, to taste

1 cup grated parmesan cheese


1) Trim head of cauliflowers , discarding core and thick stems, cut floret into bite size pieces
2) In a large bowl, combined the olive oil, parmesan cheese and salt, and then add the cauliflower pieces and toss thoroughly
3) Line a baking sheet with parchment paper, then spread the cauliflower bites on the sheets and roast for 45-60 minutes (turning 3 or 4 times, until most of each piece has turned golden brown)
