Quinoa with Feta and Peas

Serves: 20


  • 10 cups – peas, green, raw
  • 5 cups, quinoa, uncooked
  • 7 cups chicken broth, low sodium
  • 2.5 cups feta cheese crumbles 


  • 1.5 cup lemon juice
  • 1 cup olive oil
  • 5 cloves – garlic
  • 2.5 teaspoon – oregano, dried
  • 1 teaspoon salt 


  1. In a large pot, boil a few cups of water. Once boiling, add peas and remove from the heat. Once the peas turn bright green (1-2 mins), rinse them in cold water, drain and set aside.
  2. Rinse quinoa. In the same pot, bring chicken broth to a boil. Add quinoa, cover with lid and reduce heat. Keep the pot at low boil for about 15 minutes, until quinoa is fully cooked. Removed from the heat and allow to rest for 5 mins.
  3. Whisk together lemon juice, olive oil, minced garlic, oregano and salt
  4. Fluff rested quinoa with a fork. Add peas, dressing and feta cheese and stir together.
